Drumsticks or Moringa are the long smooth skinned, dark green pods that grow on the Moringa tree. Within the pods is a fleshy pulp and pea sized seeds. The flavour of the drumsticks is somewhat a bitter sweet symphony. The pods are typically used be cutting them into 1-2 inch pieces, and can be added to soups, curries and the South Indian dish Sambhar. They are pickled, boiled, steamed and fried and can be prepared like green beans or asparagus too. Store in an airtight container and freeze to preserve.
