Amla, or Gooseberry, is a source of antioxidants The berries have a Sour, bitter, astringent, fibrous favlour with an aroma like that of raisins or tea. The fibrous fruit can be eaten raw, but is more commonly pickled or softened with oil, salt, and spices. They can also be soaked in sugar syrup until they become candied. Wash it in cold water, pat dry and place in a single layer on cookie tray in freezer and once frozen, transfer to airtight containers.

Arbi is a thick underground stem of a plant resembling bulbs. They are roughly the size of potatoes and similar in texture and flavour. The skin is brown but the flesh maybe white pink or purple. They are roasted, fried or boiled and are very starchy in nature. Cook in mild Indian spices and serve with Indian bread – roti. Store in a cool dry place.

Baby bitter gourds are small in size and have a thick, bumpy and rough skin. The flesh is firm, dense, crisp and white. Baby bitter gourds are aqueous and crunchy with a bitter, vegetal flavour. They are best suited for frying, boiling, pickling, baking and sauteeing. Boil slices of the vegetable and keep in a mixture of vinegar, turmeric and salt to reduce bitterness. Cook them into stews, soups and curries or pair with coconut milk, cumin, coriander and chilli. Store in refrigerator.

Fresh turmeric is a flowering plant, it is a bright orange root-like subterranean stem. The rhizome famous for powerful anti-inflammatory, antioxidant and antibacterial properties. It has a distinct flavour and can be used fresh in various recipes and is often boiled with tea to make a herbal beverage. It can be make into dry turmeric powder by peeling, boiling, drying and grinding the rhizomes. Store in an airtight container in refrigerator.

The Malabar cucumber has light green smooth skin with dark green stripes and is also known as Mangalore cucumbers, Madras cucumbers, etc. Belonging to the same family as pumpkins and melons, these cucumbers are crunchy and watery with a mild floral flavour. They are best suited for boiling, stir frying or pickling. They are commonly cooked in sambar and added to curries. Store in refrigerator.

Pungent and sticky, Sambar onions impart a very intense flavour.
